Ever regretted a text?

I knew I messed up as soon as I sent it. “I’ll save you a bite.” A bite? A bite. What exactly constitutes a bite? If I take a bite of the bite is it still a bite? The saved bite shrunk as the afternoon wore on…until it was, literally, a bite, also known as a morsel. Now, in the opinion of a woman who is 5’3, a morsel is a perfectly respectable (sophisticated even) bite. And my husband, Steve, did get a morsel of pomegranate sweet potatoes when he arrived home from work. .

Here’s the abridged version of how to make “Save Me a Bite” Pomegranate Sweet Potatoes: Roast two peeled and diced sweet potatoes. Meanwhile, remove the arils (seeds) from one pomegranate. In a saucepan, toast chopped pecans, then add maple syrup, apple cider vinegar, lime juice, sea salt, and LAFF protein crumbles. Combine the roasted sweet potatoes with the pecan-LAFF mixture. Top with pomegranate seeds and fresh mint. Serve warm. (Full recipe here.)

Now that the fall semester is over, I’m stepping away from teaching in Virginia Tech’s Department of Human Nutrition, Foods, and Exercise to focus on LAFFkitchen. When you order LAFF online, I’ll email or text you to coordinate delivery on a date and time that works for you. Delivery is no longer limited to 1-2 days per week. Best of all, delivery is still free!

LAFF at Eats Natural Foods

LAFF protein crumbles are in the freezer section at Eats Natural Foods. Eats is carrying the 8 ounce packages. The 32 ounce packages are available only through online orders.
